Hara Masala
Hara Masala translates to green spice mix in Hindi and is a delicacy specific to the region of Karnataka. My Naani would often make this dish year-round— her version of a herb chicken curry. This dish is featured with chicken but also goes great with beef and goat. A curry filled with cilantro and Indian spices that can be enjoyed over rice or with a side of roti and a dollop of ghee.

Ingredients:
~2lb. of whole chicken
12 garlic cloves
1 1/2in. of ginger
10-12 green Thai chilis
1 1/2 cup of cilantro
1/2 onion
1 tbs. of whole cumin
1/2 tbs. of whole black pepper
1 tbs. of salt
1/3 cup of oil
1/3 tbs. of red chili powder
1 1/2 cup of water
Using a blender, add 12 garlic cloves, 1 1/2in. of ginger, 10-12 green Thai chilis, 1 1/2 cup of cilantro, 1/2 onion, 1 tbs. of whole cumin, 1/2 tbs. of whole black pepper, 1 tbs. of salt and grind away.
On the stovetop, add 1/3 cup of oil in a pot and allow it to heat up.
Add the ground paste to the pot over medium-high heat and saute for 3 minutes.
Add about 1 cup of water and 1/3 tbs. of red chili powder. Allow the curry to cook for another 5 minutes.
Add 2 lbs. of chicken to the pot and 1/2 cup of water. Then add a lid and allow the chicken to cook on medium heat for 12-15 minutes.
Turn the heat down to low and simmer for 4-5 mins.
Garnish with cilantro and it’s ready to eat!
