Steps:
Curry:
Start by adding 1 inch of a cinnamon stick, 1 tbsp. of cumin seeds, 3/4 of a diced onion, 2 tbsp. of ginger garlic paste, and 2 tbsp. of water to a blender to create a paste.
Add 1/3 cup of oil over high heat to a pressure cooker pot. Once warm add the paste from the blender and saute for 3-4 minutes. Add an additional 2 tbsp. of water if needed.
Simultaneously, create another paste by blending together 1/3 bunch of cilantro and 2 whole tomatoes.
Add in this paste and 1 1/2 tbsp. of salt, 1/2 tbsp. of turmeric powder, 2 tbsp. of red chili powder, and a pinch of garam masala (optional).
Add in the 1 1/2 lb. of goat and allow it to cook for 5 minutes.
Using the blender again, add in a 1/2 cup of grated coconut and 1/4 cup of water.
Add the coconut paste to the curry and 2 cups of water. Allow this to cook for another 5 minutes.
Cover the pressure cooker and allow the goat to cook for 3 whistles.
Chop up the opo squash and add it to the pressure cooker with 1 cup of water. Let the curry cook for another whistle.
Allow it to cool and it’s ready to enjoy!
