Korma

My Naani’s Korma is a flavorful curry made with goat and squash. The goat is tender and almost melts in your mouth with a rich flavor. A delicious curry to have with a bowl of basmati rice or roti and a staple in most homes. This dish can be ready in minutes and works great with a variety of vegetables such as potatoes, kohlrabi, or drumsticks.

Ingredients:

  • 1 1/2 lb. of goat

  • 1 in. of cinnamon stick

  • 1 tbsp. of cumin seeds

  • 3/4 medium yellow onion

  • 2 tbsp. of ginger garlic paste

  • 1/3 bunch of cilantro

  • 2 tomatoes

  • 1/3 cup of oil

  • 1/2 cup of grated coconut

  • 1 1/2 tbsp. of salt

  • 1/2 tbsp. of turmeric

  • 2 tbsp. of red chili powder

  • 1 opo squash

  • 3 1/2 cups of water

  • pinch of garam masala (optional)


Steps:

Curry:

  1. Start by adding 1 inch of a cinnamon stick, 1 tbsp. of cumin seeds, 3/4 of a diced onion, 2 tbsp. of ginger garlic paste, and 2 tbsp. of water to a blender to create a paste.

  2. Add 1/3 cup of oil over high heat to a pressure cooker pot. Once warm add the paste from the blender and saute for 3-4 minutes. Add an additional 2 tbsp. of water if needed.

  3. Simultaneously, create another paste by blending together 1/3 bunch of cilantro and 2 whole tomatoes.

  4. Add in this paste and 1 1/2 tbsp. of salt, 1/2 tbsp. of turmeric powder, 2 tbsp. of red chili powder, and a pinch of garam masala (optional).

  5. Add in the 1 1/2 lb. of goat and allow it to cook for 5 minutes.

  6. Using the blender again, add in a 1/2 cup of grated coconut and 1/4 cup of water.

  7. Add the coconut paste to the curry and 2 cups of water. Allow this to cook for another 5 minutes.

  8. Cover the pressure cooker and allow the goat to cook for 3 whistles.

  9. Chop up the opo squash and add it to the pressure cooker with 1 cup of water. Let the curry cook for another whistle.

  10. Allow it to cool and it’s ready to enjoy!
