Aush
Aush is a healthy light soup perfect for Ramadan or just a cold evening! A great appetizer to break your fast with. This is a delicious and exotic blend of lentils, rice, meat, and spices creating a mix of flavors and textures. A one-pot recipe that is extremely healthy and a great immune booster!
Serving Size: 8
Ingredients:
~ 1/3 lb. of ground beef
1/3 cup of split & skinned green gram (yellow moong dal)
1/2 cup of rice (basmati or jeera samba)
1/2 cup of barley
2/3 cup of oil
~ 1/4 of a cinnamon stick
4 thai chilis
1/4 cup of mint
1/4 cup of cilantro
1 tbsp. of ginger garlic paste
1/2 tbsp. of turmeric powder
~ 1 1/4 tbsp. of salt
1/2 a medium onion
8 cups of water
Preparation:
Soak a 1/2 cup of barley in water for 4-6 hours
Wash and dry out a 1/2 cup of rice, then use a blender to grind it into a coarse powder
Soak 1/3 cup of moong dal in water for 10 minutes
Soup:
Add 2/3 cups of oil to a pressure cooker over high heat
Add 1/4 stick of cinnamon to the warm oil
Add in 1/2 an onion diced and 4 Thai chilis slit and saute for 3 minutes
Add 1 tbsp. of ginger-garlic paste and saute for 2 minutes
Add in the 1/3 lb of ground beef, 1/2 tbsp of turmeric powder, and ~1 1/4 tbsp. of salt saute for 3-5minutes
Add in the soaked 1/2 cup of barley, 1/3 cup of moong dal, and 1/2 cup of grounded rice.
Remove the 1/4 stick of cinnamon and then add 8 cups of water
Bring to a boil and add in 1/4 cup of mint and a 1/4 cup of cilantro chopped.
Cover the pressure cooker and cook for 15 minutes (3-4 whistles)
Allow it to cool and it’s ready to enjoy!
