Khichri
Khichri, also known as Khichdi is India’s famous one-pot wonder. This is a protein-packed meal that combines rice and lentils/legumes. The perfect dish to have in your arsenal during the colder seasons. This can be enjoyed any time of the day and is great for detoxifying your body, building immunity, and providing an energy boost. With flu season amongst us, this is a great dish to make when feeling under the weather. I love the simplicity of this meal, while also providing all essential nutrients in one dish.

Ingredients:
1 cup of basmati rice
1/2 cup of moong dal (yellow split gram)
2 cups of water
~1/4 medium onion
4 green Thai chilis
~ 1/2 cup of cilantro
~ 1/3 cup of mint
~2/3 cup of oil
1 tbsp. of ginger-garlic paste
~ 1/2 tbsp. of salt
~ 1/2 tbsp. of turmeric powder
ghee for garnish
Soak 1 cup of basmati rice and 1/2 cup of moong dal in water for ~ 2 hours.
Chop up the cilantro, mint, onion, and chilis.
In a small pot over medium-high heat, add 2/3 cups of oil, onions, and chilis-saute for 2-3 mins. Then add 1 tbsp. of ginger-garlic paste, 1/2 tbsp. of salt, and 1/2 tbsp. of turmeric powder and saute for 2 min.
In a rice cooker, add in the basmati rice, lentils, cilantro, mint, spice mixture, 2 cups of water, and cook.
Garnish with a dollop of ghee and it’s ready to eat!
