Pudina (Mint) Chutney

This is one of the easiest and most satisfying chutneys you can make. A refreshing side that pairs well with almost everything. Pudina in Hindi translates to mint—the star of this recipe. Mint is packed with great health benefits; it has one of the highest antioxidant content and fights free radicals in the body. It is also great for soothing the digestive system. One spoon is all you need to add a kick to any meal.

Serving Size: 4

Ingredients:

  • 3/4 cup of mint

  • 1/3 cup of cilantro

  • 8 green Thai chilis

  • 1/2 cup of grated coconut

  • 4-5 cloves of garlic

  • ~ 1/4 tbsp. salt

  • 2 tbsp. of olive oil

  • lemon and onion for garnish


Steps:

  1. Add 1/2 cup of grated coconut, 8 green Thai chilis, and 4-5 garlic cloves to a blender. Briefly blend these ingredients and then add in the mint, cilantro, salt, and olive oil. (salt to taste)

  2. You can add a few tbsp. of water and you should be left with a creamy texture.

  3. Garnish with lemon and chopped onion and it’s ready to serve!
